Hey Council Fans,
Welcome to 2016! This exciting New Year is going to bring some exciting changes at Council. We accomplished a lot in 2015 with expanding our Beatitude Tart Saison program. While we will continue producing great Beatitudes and distributing them all over Southern California, we will also be expanding the production of our other beers as well.
This year's expansion is two-fold. First we are currently adding (5) 7 BBL stainless steel glycol jacketed fermenters, a brite tank, and cold liquor tank to the brewery. This will mean more of the awesome beers that are currently on tap in our tasting room as well as a little more distribution of some of your favorites to local bars and restaurants.
The second part of our plans for this year is to expand our barrel and wood-aged production. This means more sour and funky beers for you. Just a couple of days ago we got 24 more wine barrels (8 red wine barrels and 16 white wine barrels). These barrels will bring us up to 88 barrels total. We have also ordered three foeders (pronounced foo-ders). A foeder is basically a fermenter made of wood (similar to a barrel but much larger). These foeders will be the perfect place to age some incredible sour and funky beers.
As we get closer to having our foeders arrive and we fill all of these barrels, I’ll keep you posted on what we brew inside of them and when you can expect to taste their contents.
