Shortly after we opened our doors, we have been making a Tart Saison and doing a secondary fermentation with a variety of different fruits. Due to popular demand that these beers have received, we have been working on increasing production. We started out with just a couple of small starters that increased to 5 gallon batches and slowly grew to a 3 BBL batch and now a 10BBL batch. That is enough to bottle some and keep it on draft until the next batch is ready. We divided the 10BBL up into three 3BBL fermenters to give us three different variations: Blueberry, Mango, and Pineapple. Since we don’t have fancy, automatic equipment, it took 4 people a total of 8 hours to bottle the three variations. When we released it, they were sold out in 4 hours. It will be about another month and another 8 hours of bottling before we release another batch of bottles which will probably disappear in less than 4 hours. Hopefully as we grow, we can make sure everyone can get bottles.
