In collaboration with Alvarado Street Brewing we took a new approach to IPA. A portion of this beer was kettle soured to produce a light kiss of acidity, followed by a generous dry hop of Mosaic, Hallertau Blanc, & Amarillo, resulting in a beer with juicy notes of overripe papaya, white grape, peach, and mandarin orange.
