Sour Red Ale, Aged in Red Wine Barrels with Balaton & Montmorency Cherries
Your 2017 San Diego International Beer Competition Best of Show Winner is back! Our first batch of Lickable Staves sold out quickly, but we had to give this beer plenty of time to develop and achieve our targeted flavor profile: freshly baked cherry pie! Lickable Staves is finally ready for release and we can’t wait to debut our new 375 ml bottles. Purchase bottles of Lickable Staves online (store.councilbrew.com) or in either tasting room starting Friday, October 5th at 11am. Draft pours will also be available to celebrate the release of our big winner!
Our recipe for Lickable Staves was specifically developed to highlight both the intense tart cherry pie notes and nuanced baking spice (cinnamon, nutmeg, clove, allspice) flavors that only Balaton cherries possess. The malt bill builds off of our 2nd Anniversary Flanders Red by creating a rich and complex mix of Munich, Vienna, Special B, Caramalt, Aromatic and Flaked barley. This strong malt backbone is important as it provides flavors that match the Balaton cherries and adding the Montmorency cherries gives the fruit flavor more depth. Aged in barrels which previously held Cabernet Sauvignon wine, this Sour Red Ale has a firm acidity that matches the natural acidity of a cherry. As the beer warms, the soft vanilla notes become present from the red wine barrels. Subtle baking spice flavor also shows up to complete the profile of freshly baked cherry pie. Take your time and enjoy the flavors from each layer of this complex beer.
